Case Background:
Anna Gutelius was hired as the catering manager for Savor restaurant and catering by the general manager and part owner Jon Firmature. Savor is a middle upper class restaurant located at Rockbrook Village strip mall in Omaha, Nebraska, and has been around for five years. Her job here is to execute the restaurant’s catering business. Executive Chef Rob Mattoch is young hip staff that graduated from Culinary Institute of America. He concentrates on preparing meals made from combination of food and selected wines. Savor prepares its food from the fresh ingredients purchased locally, such as bread from Great Harvest Bread Company located at Rockbrook Village strip mall and fish from Absolutely Fresh another local market. Savor seats 115, which is over flowed during lunch hours and has enough space for another 50 more customers during dinner.
Savor fully uses the popularity of social media such as Facebook, Living Social, and Townpool for its advertisement. Its also uses other internet tools such as Blue Sky Factory’s “Share with your Network”, Strong Mail, and Responses Interact Campaign for social networking. Along with these Savor has a website that provides information on its menu, future promotions, directions and contact information for managing staff. And from its email collection it sends out monthly newsletter and promotional coupons.
Problem Identification:
Even though the restaurant is running successfully it struggles in keeping up with its catering business. Savor is looking to expand and lease another building specifically for catering. The estimated cost to lease another building would cost them $2500 for rent and additional $600 for incidentals. Even after so much of social media advertisement Savor’s catering business is often unknown to its potential clientele. Anna knows this is a problem and needs to fix it specially when there are other big competitors such as Brandeis Catering, Upstream and Ryan’s Bistro. Out of this Brandeis Catering is a major threat to Savor. And add to that space limitations, ineffective marketing strategy and tight budget makes the case even worst. The main root problem here is the catering business, which is unknown to its potential clientele. An action needs to be taken for this problem if Savor wants to grow in the catering business.
