Each one of the assignments over the past eight weeks has served either as a reminder or provided new insight on the importance of nutrition. However, the assignments on carbohydrates and dehydration made me realize how important they are to the human body. Whenever I want to lose weight, I have always thought of carbohydrates as the “enemy.” What I did not know is that there are good and bad carbohydrates and both are essential in providing my body with the energy it needs to perform normal bodily functions.

I learned that consuming less of the bad carbohydrates found in refined and processed foods like white rice and white bread can help in preventing diseases like diabetes. I also learned that the good carbohydrates, also called complex carbohydrates are the ones I must aim for. These include whole grains and vegetables because they contain essential vitamins that help in the absorption of nutrients, and that they are good sources of fiber that helps the digestive process. (Grosvenor & Smolin, 2006)

Another topic that provided useful insight was the topic on dehydration. I have always known that water is important for maintaining health but after conducting research for the assignment, I discovered that water also plays many important roles in my body. I learned that water helps in regulating body temperature, provides lubrication for joints, cushions body organs, and helps the chemical reactions of metabolism that help my body to absorb nutrients. I also learned inadequate water intake can cause dehydration which if severe, can cause death. (Grosvenor & Smolin, 2006)

The lessons from this class have taught me that good nutrition is important for health and that the right amounts of carbohydrates and adequate water will ensure the proper functioning of my body.
