Low Fodmap Experience

OK I just love food.
I love to source the right ingredients, plan the menu, cook it, and then eat it. I cannot walk past a bookshop without going in and browsing the cookbook section, and I cannot pass a restaurant without perusing the menu, cook shops are a nightmare for my credit card, and I am, I guess addicted to food.
Whenever I travel I have to check out the best - not necessarily the most expensive - restaurants, and cafes. I plan visits to the local producers, and try the local delicacies. I once drove all the way to Bruny Island in Tasmania to try oysters, and have eaten my way through most of the cheeses in France!
I love food, and fortunately it loves me - well at least for most of my life it has.
However,after a terrible time recently with high cholesterol, bloating, IBS, and reflux I have recently discovered that I am lactose, and gluten intolerant, coupled with a growing intolerance to certain shellfish, citrus fruits, red wine and red meat!
So, after a visit to the dietician I was put on a low FODMAP diet. No lactose, no sugar polyols - Sorbitol, or Mannitol, low fructans, and no gluten! And no wine!
Owwwwww! I just wanted to run and hide, this isn't happening to me. I can eat anything.
After a few days of denial, more indigestion, and painful reflux I finally surrendered to the idea that my eating habits had to change, so I settled down with the diet book, and did a little internet research into low FODMAP, and found that there were many food combinations, and recipes I would have overlooked before, and started experimenting.
I made the most amazing Frittata (Spanish Omelette) for dinner the other night, my family loved it, and we were all full after just one decent slice. All those veggies, free range eggs and parmesan. Next evening
