Sonnie’s Gourmet Sandwich Café case
The first issues that stands out to me are the line and the wait time. This means that the process isn’t efficient enough. Also the order preparation takes too long to complete. Those issue cause potential customers to turn away and look for alternatives.
One of my suggestions is to create some sort of online or phone order system where people who have no time to stay in the long line would have an option to order in advance and pick it up at certain time. This would decrease the regular lines too. Also I see that it take too long for the whole process to be complete, from the start of the order to finish. My solution for that is to take an example of “SubWay”, and make the distance from the start to finish shorter, so that the person walks in and out faster. They could also have some most common sandwiches prepared before the prime lunch time and have a separate counter for them, so that people would be able to buy a regular sandwich quicker. It also helps to have a separate Card and Cash registries, to increase time efficiency.
