Question 4: If Kershaw were to change the competitive priorities for the pizza operation, what are the
gaps between the priorities and capabilities of her process? How might this impact her operating
processes and capacity decisions?
a)Including pizzas on BSB menu is one of BSB's attempt in pursuing its efforts to add variety to its food selection. The BSB pizzas have been a great success as a newcomer in their menu thus, increasing its sales as well as its profit margins. In spite of the success, BSB has to face new challenges. Since demand for the pizza is increasing, Kershaw realises that her current capacity is not ample enough to cater for the new volume of demand. She is shortage of space to store her equipment and facilities for her pizza-making such as ovens and tonnes of ingredients. The new pizza menu are risking her other grill menu, constraining her whether or not to consider other grill menu to be offered in the menu. With her existing facilities, she had to confront the fact the she are able to increase her pizza supply at the expense of other food, thus defeating her prior intention in the attempt to offer a variety of food.
b) Kershaw realised that she is also facing with a new problem concerning the time for delivery service for call-to-order pizzas. She assumed the gap that would occur by comparing the increasing demand and the capacity of the delivery service, to which at some degree, the delivery time might slowly increase and may result in customers being unsatisfied and will start to issue complaints. This will affect the business significantly overtime as customers will slowly choose other pizza supply with better delivery service regardless in or off campus. Regular customers will not be loyal as they might find a better service with pizza that might fit their preferences. Therefore, sales will decrease
